I thought I should document this process because I struggled to work out how to select all the photos in the Google Photos app myself until I eventually googled the answer!

To select all photos in Google Photos, on mobile tap and hold your finger on the first photo then drag your finger all the way down your entire list of photos. On desktop, click in the top left corner of your first photo, hold down the shift key, and click on the last photo in your list.
